Beet-iful Homemade Hummus

One thing I've definitely missed whilst being on the road is my delicious homemade hummus. Not only was it super tasty and healthy (with no preservatives or artificial ingredients like the one's you buy in store), it's also really cheap and easy to make. And although some of the ingredients like the unhulled tahini may lean towards the more dear side of the costs, it will last you a long time and you'll be able to make numerous large batches of hummus (making it rather cost effective and a great investment for your health- unhulled tahini is jam packed with magnesium, potassium and iron and is one of the best sources of calcium).

What I also love about this recipe is that it makes a GIANT batch, meaning you'll have heaps of hummus to use for the rest of the week. Everyone at the hostel I lived in on the Sunny Coast always loved when I made this beetroot hummus and I always ended eating it with practically everything (yup I'm talking breakfast, lunch, snacks and dinner).

Ingredients:

-1 big splash of olive oil

-1 can of (partially drained) chickpeas

-1 clove of garlic

-1 peeled small/medium sized beetroot

-1 pink of Himalayan salt (or sea salt if you prefer)

-1 dollop of unhulled tahini

-2 small chilies to give it a cheeky kick (optional)

-Juice of 1 lemon

-A sprinkle of smoked paprika (for extra flavour)
